Hi Everyone , I have been interested in opening my own pizzeria for a number of years.  I love pizza, and I want to learn as much as I can about the commercial side of the business.

You might find it helpful to register at the PMQ Think Tank at http://thinktank.pmq.com/viewforum.php?f=6. That is a forum that is visited by professional pizza operators. That thread is not updated but it still contains a fair amount of useful information.
