If you like salads, making your own croutons is really simple, tasty and cheap. Any leftover bread will work as long as it's not rock-hard bagels.
Just cut the bones into bite size pcs, toss with melted butter, olive oil, salt and spices. Bake for 15 minutes at 375, spread out on a cookie sheet. Turn once to evenly toast. My favorite spice mix is garlic, dill and mixed red/white/black pepper.
To keep, put them in a ziploc bag once cool, throw in some powdered parmesan and they will last several weeks. You can freeze bags of them until needed.
