He contacted me after the NY Pizza Show and said he'd send me samples of the flour and also a can of Italian tomatoes. I was stoked.

Unfortunately nothing has arrived, and of course now I can't find his contact info.

Can anyone help?

I know that Orlando Foods in Maywood, NJ is the Distributor. I do not have the number however.

Pizza Brewer, where are you located? I just picked up a 50 pound bag for $28.50. I'm in SoCal. But my bag says pizzeria across it.as wel as Caputo, etc..

If you are worrying about which Caputo 00 you have, I think there is no cause for concern. Originally, Orlando Foods, the importer of the Caputo flours, was using 10 1-kilo bags for samples. However, because they were also selling the Extra in 10/1-kilo bundles, this led to confusion. Now the samples of the pizzeria 00 flour, such as PizzaBrewer received, come in a 10 kilo bag. This explanation was given to me by my contact at Orlando.

Thanks Peter! After seeing the bag he bought and seeing mine, I started to wonder if they were the same or not. I've got too much flour now. 50 pounds!! It will take me a while to get through it but the price was pretty good. They didn't sell it in smaller bags since they mainly distribute to pizzerias and not guys like me that just walk in. My Grande was only $2.25 a pound which I think was a very good price since I only bought one 6 pound block.

Hi Scott,
I'm in Southern California. I've paid that price all the way up to $2.68 a pound. I buy the 6 pound block but they also sell it in diced form but you have to buy a case which is too much cheese for me. I'd prefer the diced. I usually just cut off a piece from the block and put the rest in a ziplock in the fridge. The problem is Grande is soft so it's hard for me to grate it but it's definitely worth it. The price seems to move around alot and i'm not sure why. I was at a deli in Huntington Beach and they wanted almost $6 a pound for Polly-o. I like Polly-o....but not that much.

I've been having fun with these samples. As I posted elsewhere I really like these chopped tomatoes, I prefer them to all the San Marzanos I've tried.

I first tried making dough with 100% Caputo flour. I can confirm that you get less than ideal results with a normal home oven. So I've been following DiFaras example and using 75% Caputo and 25% high-gluten (KASL). Very very nice crust.

Based on the Caputo website, it looks like I didn't get the Pizzeria or the Extra Blue, rather the Confezioni flour. I'm basing it on the picture here: http://www.molinocaputo.it/eng/confezioni.htm

Or is the packaging Caputo uses not always tied to a specific product as I'm assuming?

Any insights appreciated.

If I am not mistaken, what you showed in your earlier photo looks like what is shown here: http://www.molinocaputo.it/eng/extrablu.htm.

To the best of my knowledge, there are only three Caputo 00 flours currently being sold in the U.S., and the Confezioni is not one of the three. I know that sometimes the sample bags contain a flour that is different than what is shown on the bags.

Pete: If you scroll up this thread you will see the photo of the bag I received. It is identical to the picture of the Confezioni on the Caputo website.

I'm not complaining, it was a free sample (10 kg.

) and I'm enjoying it, I'm just a bit confused...

P.S. It would be much easier if they printed the type of flour clearly (or even at all!) on the packaging, but hey, it's Italy...

I stand corrected. I was looking at the baked goods shown on the bag but missed the words across the bottom. I would call or email Anthony or Fred at Orlando and ask them what you really got. Free or not, it is important to know what you are working with since the flour will govern the results you get.

I believe those words translate into "the tender grain" and are used for 00 and 0 flours.

I almost crapped my pants thinking I just spent a lot of dough on dough that wasn't the right dough!
But luckly I think this is the right 00 flour, just not sure if the price was right.

Perk: It *is* a bit frustrating that, despite making about a half-dozen different "type 00" flours, Caputo sees fit not to label them clearly (or at all!) on the packaging. We're having to guess based on the printed colors and pictures on the bags.

But as I noted before, after all, it is Italy...
