Just wondering what's the differance between not cooking ur crust for a certain amount of time before putting the sauce and cheese on and just doing it all at once

The difference is that the cheese will burn before the bottom cooks.  I always parbake my Sicilian at 500 degrees for 15 minutes with just sauce on it.  Then add cheese and bake until it bubbles and gets a nice golden color usually about 7 minutes in my oven.
