My well-seasoned cast iron pans are all I ever use.  They give a nice crust, and my pies never stick.  The dough actually pulls away from the pan a little bit from the side (which actually facilitates in getting it out of the pan).  I also bake at 450 degrees for 25-30 minutes.  I hope his helps!

What shelf do you bake your pies on? Is your range gas or electric?
I've got a couple of 14-inch DD pans which are great when we have guests for dinner but for the two of us an 8'' or 10'' pan is better for us (and our waistlines).
Any other tips? What recipe do you use?

Hi, Redox!

I have a gas oven.  I always bake my deep dish pies on the middle rack.  Here's the best deep dish crust for me:

3 C. Bread Flour

1 C. Warm water

1 T. Sugar

1 T. Butter (Very soft or melted)

1 Pkg. Yeast (Or  1-2 tsp)

1 t. Salt

I "proof" my yeast with the water and sugar, then add the flour, butter and salt.  I use my Kitchenaid with the dough hook for the whole thing until smooth and springy.  This makes one 10" deep dish.  The butter is key.  Your crust will be rich yet crispy.  I also use a little butter in my bowl for rising and cast iron skillet.  Mangia!

Sorry, I missed your reply. Thanks for the info. It looks good but I'm pretty sure I have to bake on the lowest shelf in my electric oven. I do love Chicago DD!

See what I mean about the dough pulling away from the sides?

A fish may been a certain size in a 50 gallon aquarium for many years but drop it in a 100 gallon tank and it will grow larger, thatís why I donít want to buy bigger pants.

This is a bad, bad site. :)

LOL, Redox!  Save the rest for lunches, better yet, let other people taste it!!  You'll have even MORE friends!  Try that cast iron skillet.  You won't be sorry.

I have a beautifully seasoned cast-iron skillet and I will certainly be doing this very soon.

I'm going to try a small Chicago DD tonight in a Lodge 8 inch skillet. I'll post pics if it turns out; if it doesn't turn out then I'll have a nice grilled sandwich. I've got a lot of deli meat. Anyone ever try grilling a sandwich using regular Mayo instead of butter? It works better and is less greasy. Honest!

I was playing with the dog and forgot about the pizza for a few crucial minutes and it got a tad overdone on top. It still tasted really good though. It shot out of the cast iron skillet like a pilot's ejection seat. Easy peasy. I really like using the skillet and it doesn't feel like it would come out any better in a more traditional pan. Any thoughts?

I have a thought....  Do you deliver???  Great looking pie, I will be trying this soon.  I'm gonna use provalone cheese and some pepperoni though.
