Does anyone has experience with wood fired ovens with a rotating floor?
What are the pro's and cons/

I don't think you are going to find anyone here with experience cooking in a rotating hearth oven.  Just from observation they seem like they would be great for slightly slower cooked pizzas(2-3 minutes) in a more production based commercial environment.

In my opinion the biggest pro is the ability to have a lower cost less knowledgable staff run the oven once everything is dialed in.

The biggest con is that you have taken an ancient design that would basically need to crumble to the floor to stop working and added a mechanical feature to it that could lead to breakdowns.

Pavesi offers some nice rotating floor ovens. gas or minimum gas assist is the norm on those .

Hi There,

I will be happy to help you with that.

The biggest down size is the price of the oven.

But there are many advantages such as not having to rotate the pizza, very even and consistent cooking result and you really make the most of your floor space.
You have the option of gas of wood fired oven.
