Finally got a hold of a couple of bags of KA high gluten flour and made a couple of beauties tonight. The one I was going to photograph got eaten.
The Sam’s bread flour is going in the trash. I must say though when Sam’s sold the Baker’s & Chefs high gluten flour it was pretty good.
Ran a side by side taste test tonight between Poly-O and Sam’s pre-shredded mozzarella. I preferred the poly-o slightly but I thought the Sam’s would pull a mighty long strand of melted cheese.
