Al's is the best sandwich I've ever eaten in my life. Period. #2 isn't even close.

I am with you, TXCraig. I HATE HATE HATE HATE sliced sausage on pizza.That was one of the things I usually hated about New York pizzas when I lived in NYC - many of the places sliced their sausage, and many of them had crappy sausage.
Boil in casing 'til cooked through. Slice thinly. Sautee briefly. Apply. Mmmmm.
I grew up in NJ a few miles from NYC. Never in my youth did I see sliced sausage on a pie. It was always applied raw from bulk. I left the area in the late 70's and go back regularly and have been shocked by how much the pizza has changed over the years. I will always use raw sausage. Get some pork shoulder and grind it or buy it ground and add your seasoning. That will top most any store bought sausage other than an artisan meat shops product. Walter
Walter,That's funny because I always remember it being sliced in my part of NJ about 30 minutes from NY. This would have been late 70's to early 80's. I guess because of this it is how I prefer it prepared.
