Using Fattorie Garofalo Mozzarella di bufala

Picked some up at Costco.   :chef:

Since it's floating in solution (I assume salt water)... do I remove the cheese balls and let them drain before dressing my Neopolitan-style pie?

If so, how long should I allow it to drain?

When I use similar cheese I rinse, then place between paper towels changing the towels until they remain dry, if I have the time. If a larger ball of cheese I tare into usable sizes first.

Yes, you need to drain them, and the closer the expiration date, the longer they need to drain. Either cut them in half or into 3-4 slices (depending on how big you want your final pieces), and let them drain on a few layers f paper towels for at least 4 hours. If they are really wet inside, you more paper towels or change them, and let the slices Darin for 6-8 hours. Tear them into pieces when you are ready to use them.

If I have the cheese a few days before im going to use it I hang it in cheese cloth in my fridge.    Evaporating the moisture out of your cheese will leave a little more of the milky goodness in there than the paper towel method.  You do need a few days for this to work, though.

Alright, I removed the cheese balls from the salt water, cut in 1/4s and placed on a paper towel laying inside a mesh strainer. The mesh strainer is suspended over a bowl to allow it to drip.  The whole assembly is in the fridge.

This will keep for 48 hours right? (I'm making pizza Wednesday).

Costco in south Jersey might just be lacking. I'm going to check next week.
