I think I sliced my VT pepp. to thick and domed it a bit to long. I got no cupping out of the deal.  Yes, It was dark.  Good thing is that there will be a next time.

I tried VT smoked pepperoni. It was kinda bland and almost reminded me of the sweet summer sausage you get in them gift boxes at christmas. For $21/LB I'd rather buy Filet Mignon.

Even though I think this is a very good product, like every other "ingredient category" in the pie creation process there is not one product in this category that will universally stand above the rest, and please all comers.

Not to totally derail this thread, but I make a pizza using summer sausage.

To poke fun at my wife (a Packer fan from WI) I call it the "Cheesehead" and it's actually very good.

No sauce
cheese curds
summer sausage (sliced)
beer braised onions
finished w fresh thyme
Back to being a civilian pizza maker only.

I think it was probably a one-time buy VT used to blow out some excess inventory. That sort of thing seems pretty common at World Market. I don't believe it was ever a regularly stocked item.

Whole Foods carries every VT Smoke and Cure product EXCEPT the pepperoni.  The manager was very willing to special order it for me but has no intention of adding it to their regularly stocked items?!?!

Prior to 2 months ago I had never seen it at World Market either.

John - I believe it is because the pepperoni contains sodium nitrite and other additives, whereas the other products do not.
