I am astonished by how many people are buying this pepperoni here on the forum. I think the company owes me a few free sticks!

John,

I would be embarrased to show you my current stash. Any "normal" person would call the producers of "Hoarders" on me. But it is a great product. And having spent 8 years of my life in the state, I'll pretty much buy anything with the name "Vermont" in it. And once you add in the words "smoke + pepperoni" then I'm like a crackhead on Fri Nite.

With absolutely NO disrespect to TxCraig's VTP pies () I must say that the VTP pie on your instagram site is absolutely stunning.

I think I sliced my VT pepp. to thick and domed it a bit to long. I got no cupping out of the deal.  Yes, It was dark.  Good thing is that there will be a next time.

I agree:

3:00, 6:30, 7:00, and 9:00 all look cupped to me!

I tried VT smoked pepperoni. It was kinda bland and almost reminded me of the sweet summer sausage you get in them gift boxes at christmas. For $21/LB I'd rather buy Filet Mignon.

Hey now! :o You can't say that here! >:(

Just kidding :)

Even though I think this is a very good product, like every other "ingredient category" in the pie creation process there is not one product in this category that will universally stand above the rest, and please all comers.

Good on you for bucking the trend on this partisan thread!!!!

Funny you should mention summer sausage. I was thinking about using some on a pie next time. Can't decide on chopped, shredded, sliced, etc.

John K

PS you need a better butcher if you're paying $21/lb for FM :-D

Not to totally derail this thread, but I make a pizza using summer sausage.

To poke fun at my wife (a Packer fan from WI) I call it the "Cheesehead" and it's actually very good.

No sauce
cheese curds
summer sausage (sliced)
beer braised onions
finished w fresh thyme
