What size hood do I need?

Hello All,

Can anyone help me determine what size hood I would need for my pizza oven?

The oven would be a Lincoln Impinger 1100 series gas oven

I will be operating in California.

I'm just looking for a ballpark on how big the hood would need to be. 6ft?8ft? Is there a rule of thumb on this depending on the size of oven?

I'm fairly new to this, so any info would help thank you so much!

I think I would want that answer from your local health dept. inspector, no?

You need to talk to your local zoning department, and also find out what class hood you're gonna need. Since pizza ovens typically do not create "Grease Laden Vapors" this should lower the cost considerably and negate a fire suppression requirement.

Do a search here on this topic. It has recently been discussed that, depending on where you are located, things can get kinda tricky...such as a "new build" being required to do more than many others are allowed in the same area. Just saying...expect the unexpected, if you will...
