Last topping

I've seen recipes with a parmesan or other cheese put on top last.Then there are probably just as many with saus on last.  What is the last topping you put on?

So I'm assuming everyone does use a layer of Parm on top as the last layer before cooking.  Oh and a prayer also.

Sure, I think most people do...it adds a nice touch. That is, when I remember to put it on...

I use grated Romano.

Last toping BEFORE or AFTER bake?

For my Neo-politan-style...

1. Sauce
2. Basil
3. Mozz
4. Parmesan
5. Olive oil

Bake!

I put my Parmesan either 2nd,on top of the sauce,or last just as it comes out of the oven lettling the heat from the pie just relax it. Last before the oven over cooks it and loses some of the nuttiness and gets too hard imo. On top of the sauce 2nd adds another flavor differently and especially helps bind the sauce a bit when it's a little too loose

my last topping of late has been a shake of dried oregano.  I dont think it does much to the taste but I love the aroma it provides when you pull it out of the oven!  also I think they do that in that aurelios video where they make one on a morning tv show....is it vegas? ill check the aurelios thread again!

Let me go ahead and drop some heresy:

V&N is OK.  The old school ambiance is cool.  Service is mediocre.  Pie isn't really that great.

There.  I said it.  Somebody had to.

The several times I've been there, I enjoyed it fine, but it simply doesn't deserve its outsized reputation here on the forum.  If I could eat only one thin crust in Chicago, V&N wouldn't even crack my top ten.  No way.  Not even close.  Every time I've had it, it's sloppily cared for.  Spots of badly burnt cheese on the bottom, etc., for a pure carbon bomb, blowing out all other flavors on that piece.  The sausage is just OK.  The sauce is thin and not that flavorful.

But look, I get it.  You want an old man bar where you can get 75 cent Old Style drafts on Tuesdays and have a pie there, too?  Yeah, V&N is OK for that.  As a pizza destination?  Meh.
