olive brine in pizza sauce

Hi everyone!

Just wanted to share a little discovery of mine.
I just tried adding some of the brine, that comes with salty pickled olives, to pizza sauce, replacing some of the water that I mix the tomato paste with. The taste was very good. The olives I use are pickled in herbs and chili. Of course I don't add salt, as the brine has lots already.

My pizza sauce ingredients:
2 heaped tomato puree
2 T olive brine
4 T white vinegar
4 T water
1 t garlic powder
1 t oregano powder
1/2 t chilli powder
100g feta cheese
4 T sunflower oil

I first mash the feta in oil using a fork, then mix in everything else with a spoon.
Next time I'll add half a teaspoon of MSG and see if it gets better.
