I am Ian a massive pizza fan from the UK and a amateur home Pizza cook.
I really want to learn how to make even better pies with good crust and flavors.
My last attempt was a near dissaster as I could not get the dough to stretch out, it kept shrinking back. Then it stuck to my metal peel, so it would not slide onto my stone in my oven.
Anyhow, I cheated an hand stretched it onto baking trays and part cooked it. Then removed it, dressed it and then put it on my stone.
The best pizza I have ever made but I want to be better.
I would love to learn how to spin and stretch dough like the pros !!!
Lastly Im in the US at the moment and a friend took me to Mellow mushroom - WOW I loved it.
The dough flavor and the slight aniseed flavor to the sauce. I am hooked.
So I will be reading the forum and topics avidly
