san pollo mozz/prov blend?

I called a local pizza shop here in Columbus, Ohio to see what kind of cheese they use.  They said it was San Pollo or something to that effect.  I didn't ask them to spell it out or anything.  They would only disclose that name and that it is a mozz/provolone blend.  Comes shredded to them I think.  Any idea what they could be talking about?
