I wonder if a local Pizzeria would train me if I offer to work a short time for free, they probably would not want to share there formulas or sauce recipes but I could get great experience of the whole process.
If your local pizzerias are anything like ours you'd probably get in there, all eager beaver and whatnot and then ask the guy, "So tell me about your dough....hydration?....type of flour?....yeast?....."
Then he'd give you a blank stare, since he's 23 and didn't "technically" finish High School, and then say "I don't know man, it just comes off that Roma Food Service truck and we put it thru that rolling machine thing and then I throw the sauce ..."
"Wait!", you say, "Tell me about your sauce!"
To which he'll respond "It comes in those 5 gallon plastic bucketbags"
Take it from a total newb whose skills have gone from zero to 20 (the speedometer goes to 140) in 8 months on this forum: You can learn a TON from the people here!
No need for "school" (yet! )
