It is fascinating to me to see the step-by-step evolutionary path that some of our members take from their day jobs or careers to becoming pizza professionals. It is though the path is preordained and inexorable and once set in motion cannot be stopped no matter how much effort is put into resisting it, much like a moth being drawn to the flame. Query: Who's next?

This quote from Peter or a version of it has been rattling around in my head for sometime. As busy as we were with the pasta business and as much as I told myself I didn't want to, I often still thought about making pizza. After a meeting to expand w an investor didn't work out and we decided (for now) to keep the business smaller and still own 100% of it. That's when I decided to go ahead and get a mobile oven. The plan is to do mostly catering on weekends and hopefully a pizza night here and there. I'm super excited and my wife is probably getting an ulcer.

Here's the oven before it left MD.

I am sure the oven will work well for you Its sure going into good hands and you will do it  some serious justice for sure !! cant wait until  you start experimenting and get out thee doing the deal Its a Blast!  Let me know if you need any help with anything. You inspired me too many moons ago with your 2 stone pies that made me drool  :chef:

The trailer is a Sure-Trac no secret there.
No model available as it was custom designed and built for Bread Stone Ovens and FGM ovens. If you want the same one I can help you with that.

It's exactly what I need, but if I buy it I don't want to pay high shipping costs, etc... and it appears there are no local dealers near me... is there space underneath the oven?

Thanks Larry. It arrived late this afternoon but I could not get down there to see it. I will go meet her tomorrow morning. Still haven't bought the tow vehicle yet, but have some leads. $$$

So the tow vehicle I was going to buy got sold. >:( The oven is sitting at a family members shop over an hour from me. I wanted to bring it home and start curing, but it looks like I'll be waiting a bit more.

Know anyone with a camper?  They'll probably have a good truck. A few hours of borrowed truck for a bunch of pizza seems like a fair trade to me.
