how to keep pizza from sticking to tray

Hi everyone

I bake my pizzas in 16" round stainless steel trays. But the pizza always sticks to the tray, specially in the center. I usually end up prying it off hard using a flat edged wooden spoon.
I shape my pizzas in tray by hand, no tossing. I just flip the fermented dough balls over from oiled bowls, then shape in tray. The bowls has oil so enough oil is transferred to the tray while flipping over.
What should I do to keep my pizzas from sticking please?
Any ideas?

sallam, you can either season your pans with oil (google it for instructions), or coat them with vegetable oil spray.  either method should help prevent sticking.

Sure, I'll post pics of my pizza, just give me  a few days.
Regarding oil, when I put the dough ball in the tray, lots of oil from the bowl comes with it already.

Btw, I followed the SS seasoning tip, and the result was awesome! My pizzas now hardly stick to the tray, and very easy to slide out. Many thanks Bob.

usually hapentīs when water is over 44%. check your water %.
this water % is for high gluten fluor. and the oil works to
