I attended the keynote address by Robert Irvine. For those of you who have seen him on the tele, he is the same in person.
He started out by bringing two folks from the audience up on stage. He had them and all of us raise our arms in the air and SCREAM!!!!!!!!
He talked about keeping your business making money. Motivational and practical advice. Glad I went.


I made my way through the vendors , many,many aisles of vendors, watched some of the pizza making comp, which was great because every entry made for the judges also has to be made for the attendees. Good pizza there. I then went to the demo area, I believe This is Tony Gemignany's area. 1st demo I saw was Robert Irvine making a couple pizzas. Second demo was Tony making a Roman style that he has added to his restaurant menu. Third demo was Tony on traditional Margehrita pizza.
During the third demo Tony awarded a lifetime award "Pizza Pioneer Award" to an Italian pizziaolo , Antonio Starita.

The rest are from the third demo of traditional Margehrita pies.

Tony said that Antonio has trained MANY pizzaiolos over the years.

Great news, friends. A family member (not immediate) competed in Vegas in the 'American Pan Pizza division' and  took 1st place in the Mid America region and 5th overall in the world!
I'm proud of the guy.  He was representing Andolini's Pizzeria from Oklahoma.

I got this one for a white sauce this AM. Tasted really good.

NEAPOLITAN. Demo
white Pizza Sauce
PANA: Heavy CREAM lqt
1/4 tsp zanthum gum

6 oz ricotta cheese.
Salt to taste

Mix with boat motor, (immersion blender)

I had a number of PM individuals come up to me during both of my presentations at Pizza Expo. My presentation on Tuesday (room 260-N) went from 4:00 p.m. until right at 10:00 p.m. we had a great group with lots of great questions.
Did anyone get over to the XLT Oven booth? My partner, Jeff Zeak was working in their booth making some fantastic pizzas (one was a 64-inch diameter monster!) as well as a lot of other tasty items using the XLT ovens.

Hey Tom ! I met You tuesday evening at your lst seminarended with the freezing topic  and Yes I did make the XLT booth  Detroit and Deep dish Pies were great from there! I HAD some pics of those Beauties  (and of you in action) but they are all gone  :'(
thanks !! Heres a shot of That bad boy care of Pizza Expo site. Oven  is right there under the bread
I was working with a local NY Pie guy from Vegas (NJ) who brough his dough in to  make a NY style tried everything every pan disc...but just could not get that "deck" finish  on the crust Otherwise I am impressed by these ovens consistentcy and quality all good! lots a moving parts too Loved the pie !

I'm glad you got to see that huge pizza. While Jeff was developing it I had the dubious honor of cutting one of those babies into 3-inch square party slices. That's the first time slicing a pizza was ever work for me! Jeff always tries to do something a little different every year, we can only guess at what he might be thinking about for the next Pizza Expo.
Did anyone have a chance to sample some of the other things he was baking in the air impingement ovens? Breads, rolls, ribs, wings, shrimp, fish, brownies, muffins, dessert pizzas, breakfast pizzas, the list of things he makes with those ovens just goes on and on, not to mention all of the different types of pizzas he makes. Jeff has become the master of the air impingement oven in my opinion.
