First Bake of 2013!

Now that Spring is here I decided it was time to unwrap the mighty Blodgett on the back deck and run a few pizzas through.  All pizzas shown are 18" and 63% hydration using Power Flour.  My pizza-making skills seemed a little rusty but after a while it was like riding a bicycle.  Good times with friends and family eating pizzas and drinking ice-cold "Mexican" made Cokes out of the bottles with a few beers thrown-in for good measure.

Pizza #1

Senorita-Rita, a favorite with almost everyone, featuring Calabrian peppers, Calabrian Oil drizzle, and fresh basil.

Pizza #2

An old fashioned Pepperoni that will undoubtedly be our best-selling pizza when and if we ever go public.  This bubbly pizza (I like the bubbles), is highlighted by Vermont Smoke and Cure Pepperoni which is my absolute favorite.

Pizza #3 is always requested whenever we announce a pizza bake.  Dubbed "Mahalo" it features BBQd fresh pineapple,  Black Forest ham, Calabrian peppers, and a hot oil drizzle.

Pizza #4 was an experiment using thick sliced, premium peppered bacon.  The bacon was first baked and if you've never had baked bacon before, you don't know what you're missing.  Baking this pork product results in a sweet, juicy, unique flavor, with fantastic texture.  It was baked in the oven at 450 for 10 minutes then finished-off on the pizza along with green peppers and onions.  Pretty darn good although the combination baked bacon and complementary toppings has yet to be optimized . . . a work in progress.

Should have at least added fresh tomatoes after baking but before photographing.

The last pizza of the day is always the one that gets whatever toppings are left over.  Hating to ever let anything go to waste, this pizza had a little bit of everything.  Ironically, the caboose pizza is often the best for some reason.

Those are some killer looking pizzas. I especially like the looks of that pepperoni pizza.

I agree.  Very nice indeed.  Where can members buy pepperoni bacon from? It sounds very interesting.

Beautiful. Have you tried Fresh jalapeņo on your baked bacon pie? Another one of my favorites.

Different meat stands at market do make peppered bacon, so there is such a thing as peppered bacon.

Norma, I meant pepperoni flavored bacon.  I missread peppered bacon for pepperoni bacon because I was reading the forum on my smart phone.  :-[  Maybe someone should make pepperoni bacon.

I'm irrationally opposed to pineapple on pizza, and that pie is almost enough to make me want to try it.  ;D

Yes, indeed, peppered bacon.  Thick sliced from the butcher this stuff is good eating.  However, baking bacon takes pork bellies to a whole different level.  Think sweet and juicy.  Not something normally related to pan-fried Arnold Ziffle but baking brings-out these qualities.  If not for pizza, do yourself a big favor and try baking bacon instead of frying for a BLT or with some breakfast eggs.

To accomplish this, you'll need a section of racking (as in oven racking only smaller) placed over a cookie sheet.  The cookie sheet will catch the drippings and avoid a mess.  Bake for about 20 minutes at 450 and enjoy bacon heaven.

Craig, I like your idea of Jalepenos with bacon.  I forgot to slice up some fresh tomatoes but these should work well with bacon also.  Also, violate traditional pizza code and try a grilled pinapple, calabrian chilli, and Black Forest Ham pizza.  It's admitttedly a delicious but possibly polarizing combo, but even if you don't like it, others who do will go absolutely nuts!!

Looks fantastic!  I like my crust a little bubbly too.  I think caramelized onions go nicely with bacon...
