Recipe is straight from Forkish's book. Just cut the recipe to make two pies. Mixed up the dough yesterday at 5:30 am and sat on counter until 5:30 yesterday evening. Placed in fridge overnite. Preheated over to 435 and once that temp was reached turned on the broiler for 5 min. In went the pie and turned the oven back to bake.
The dough was very easy to work . No prob stretching to about 9".
Topped w green onion sausage, whole milk mozzarella cheddar & maters.
Best pie yet. Need more color and under crust needs to be a bit crispier.
