Bacio Pizza Cheese

let me first say that i was a long time user of Grande Mozzarella....i have started a new business and wanted to use it...but Roma does not handle it....The Bacio is giving off a moldy scent..its got 3 weeks left on the use by date...its ground every 4 or 5 days and kept at 32 degrees anybody else experiencing this issue...what was your solution...Pat

I just made a pizza tonight with bacio whole milk block. If your having trouble, dont fear the pre shred.    In this brand its actually pretty good... even the east coast blend (which has part skim mixed in).   I was surprised because I almost always vastly prefer the block to the pre shred.      So far I have had it four times, and its always fresh tasting.

Scott....thats sliced mozz on the pie, right??
