Beautiful undercrust and crumb shot. You are "close" to being dialed in, I'd say! That strombolizone might argue against that point, however! :-D

Tryin' to be a purist with the wooden peel idea?

No arguments there --- go get 'em! --- but I will tell you the FG peels really make your life easy......

As an aside: I bought one of the special long (pine >:() peels from Frankie G for the elongated "pizza alla Romana" and the dang thing catches on fire all the time. Probably could overcome this with a different wood/material but nevertheless....

As I'm typing this it occurred to me maybe it's as simple as cooking further away from the fire? Any ideas?

The pizza look great, definitely getting there.
You said it, cook further away from the fire and use the entire width of the oven to make the most of the flame.
The low dome of he FGM creates the nice flame rolling across the dome.
I think someone copied that and even patented it to call it their own creation  >:(
Anyhow as you get better acquainted with the oven and the flames you will be able to place the pizza to make the best of it.

Dang thing catches on fire all the time.

I personally use a wooden peel but I made it out of maple. The very close grain of the maple makes it more moisture resistant and it has never caught on fire so far.
WFO cooking is about passion.

I plan on doing mostly private catering, but when I don't I think $12 for a margherita is very fair.

They don't even understand what they have trademarked.  By design a masonry black oven is not and cannot be held under pressure by it's flue.  Unlike a kiln or other oven that IS held underpressure the flue CANNOT draw the fire across the oven.  That is simply the natural convection of the dome shape.

That price sounds about right. Also, half of the fun would be to watch you make the pizza right in front of me. So Cool and builds the appetite while waiting and smelling the pizza being made. My very best to you.
