Finally dialing in correct temps on the new oven, Effeuno P134H. Cook times are ranging between 60-90 seconds (shorter based on lower hydration). Temps are averaging 800 base/900 roof. Leoparding is coming across nicely now (marinara pie). I make about 2 pies a day. The oven is very powerful and a bit like Will Ferrell's character during childhood in Talladega Nights, "I wanna go fast, I wanna go fast, I wanna go fast" so it has taken a bit of fine tuning!
