Jamie Deen is Paula Deen's son. Her other son has a show on the Cooking Channel called "Not My Momma's Meals". Basically he makes his moms food(Paula) but reduced fat.

Norma, thanks for posting the link.  I really enjoyed the show!  It's great seeing some masters at work.  The guys cracked me up, especially when they were making buratta at Keste.

Bill,

If I get to go to visit Papa's over the weekend I will see what I can find out about the mustard pie.

Ten to one says she tries one herself at the market today. 8)

Steve,

I was just going to talk about the mustard pie today, but since you mentioned trying one we did.   :-D  I think we both thought the mustard pie was good.  We even got into a mustard Detroit style.    >:D

Norma,

That was fun to watch. Those two cuzzes are funny! But they get right to the heart of the matter and show some interesting stuff. For pizza fanatics, you know we'd al be fine with an hour episode on each place, but for the general population I can see why they have to have three places in one episode.

Can you please be sure to tell us when you are going to be featured!!

John K

John,

I agreed the two cuzzes are funny!  I could watch them for hours, but I know the general population isn't as interested in pizza as the members on this forum are.

I never will be on a TV show.

Tonights episode is called "Dough".  Of course dough master Jim Lahey of CO/Sullivan street bakery will be featured.  The cornmeal deep-dish sounds interesting... I've never had anything like that.  You guys?

I was watching the Buddy's episode last night.

They also featured the "Tomato Pies" place in Trenton NJ, and my wife noted "those don't look like anything special!" But I told her that I am sure that there is "something" about those pies that transcends the simple appearance and ingredients. That's the great thing about pizza, isn't it?

Love Sal and his cuz. Funny guys.  Hope I can meet them someday at Artichoke!

I agree that the tomato pies didn't look like anything special BUT I always appreciate a perfectly done simple cheese pie!  Maybe that's the NYer in me!

The hosts, Fran & Sal, are going to be on Jay Leno this Friday night!  Looks like the show is really picking up some interest.  Can't wait to see the 3 of them together... should be entertaining

Thanks for the heads up on Leno. If the guys made it to Leno interest must be up.
I'm a little surprised this show started on the Cooking channel instead of Food Network. With pizza being so popular I would think they would go with the channel that reaches more viewers. I base this on the fact that my cable company has Cooking channel on a tier above expanded basic. Perhaps that is not the case with all cable companies. Of course it may not matter much in today's world of streaming.
Hopefully the network will not destroy this show with major changes that they think will generate more profit, because sometimes upper management is wrong.

Assuming that the pizza is 16 inches and that a tablespoon of yeast is used (as per their instructions) the recipe translates into baker's percents as follows:

Flour (100%):    502.13 g  |  17.71 oz | 1.11 lbs
Water (41.29%):    207.33 g  |  7.31 oz | 0.46 lbs
ADY (2.32%):    11.65 g | 0.41 oz | 0.03 lbs | 3.08 tsp | 1.03 tbsp
Salt (2.797%):    14.04 g | 0.5 oz | 0.03 lbs | 2.52 tsp | 0.84 tbsp
Oil (12.52%):    62.87 g | 2.22 oz | 0.14 lbs | 4.66 tbsp | 0.29 cups
Total (158.927%):   798.01 g | 28.15 oz | 1.76 lbs | TF = 0.14

Somehow I don't think that a one-hour oily yeast bomb is going to set the pizza world on fire.
Things have never been more like today than they are right now.

Jonas,

I think it is a lot worse than that. I have never seen a NY style dough recipe that even remotely looks anything like the one you posted.
