Wow, someone was not paying attention to burn a pie to this extent.  And to burn the remainder to even out the char is even worst.  Was this a joke of sorts?  How many pies were burnt?

Yes it was a joke.  I took my family away for the weekend for a much needed break.  I sent the manager a text message Friday night asking how the pizza was turning out & this is what he sent me.

Ya it was a nice touch, all that was missing was the finishing oil.

Thanks John. Yes of course.  I was a little bit rusty. I took a couple of weeks off to give the new kid some practice. I'll be back in the saddle come the New Year.

That's a typical dinner service.  I'm not there much anymore as I've got other things on the go.  I do however, still make all the dough & pop in & out randomly.

John,
The 1st is a Margherita, the 2nd & 3rd are carne (meat), the 4th is a Sorrentina, & the last 3 are fungi.

I finally changed my avatar. :D  You no longer have to look at a crooked oven.

Update:
I have a pizzaiolo coming in from Naples within the next couple of weeks.  He's going to spend some time with me here and then we're heading to Naples to meet some vendors. If things work out, he will be with us permanently. Once he's settled in, I can begin work on the next project.  I'm hoping to squeeze in a trip to NYC with him in between.  If and when, the invitation is open to anyone interested in joining us.

how's it going?  how about an update? 
i keep eno.7 in mind and always looking for an excuse to travel there.  maybe this summer i'll make it by.  are you still there all the time?  such a great looking space.  i love the furniture.
