Im sure your right and he doesnt care, but I swear there used to be a lot more char. I worked in NYC for a whole summer about five years ago at a recording studio near difara's.... I loved that place! I wonder if at some point he stopped blending in the all trumps, or maybe the oven temp dropped, or he just started pulling them earlier (looks like one of the other two to me). He did say he was using all imported italian ingredients... but then again... grande isnt from italy, thats for sure!
