New Project in Brazil

Hi Guys,

I've been away from the board because of my new project, a Neapolitan pizzeria here in Sao Paulo, Brazil.

Congratulations on getting the project off the ground. Will it be a pizza only place, or will you serve other items as well?

Wow that looks great! Nice job. I'm curious about the brick as well... from pictures I've seen it looks a lot more like the brick used in the Acunto ovens which is quite a bit different than the firebrick used here in the USA. If you have any information you can share on it, I'd love to know!

only pizza and some fried antipasto

Do you know the thermal conductivity of the floor tiles you are using? 

Close to the biscotto sorrentino 0.7 W/m*K made with magnesita instead of alumina

Wow that looks great! Nice job. I'm curious about the brick as well... from pictures I've seen it looks a lot more like the brick used in the Acunto ovens which is quite a bit different than the firebrick used here in the USA. If you have any information you can share on it, I'd love to know!

the bricks are made with alumina, but have a burned brick mixture, ill try to find some info online and share

That's awesome Andre, most larger tiles in the states are medium or high duty which could lead to issues in a low dome oven.  Obviously you've got it all covered, can't wait to see where you go from here!

This will be my own place, i am also consulting for a new place near Sao Paulo (30 minutes by car) all Neapolitan with 2 SF ovens. Thanks for the wishes Peter!
