Everything looks great with your oven build...the pizza looks even better!   You must be excited for World Cup huh?  I have some friends in SP...who knows, maybe I'll will be able to stop by!

André, I think if looked at sternly enough, that dough would open up on its own  ;) . I bet the final product is tender as can be. Keep the pics coming!

I know that you have done a lot of experimenting with the Neapolitan style pizzas, including different brands of 00 flours, and maybe you have mentioned this before, but are you using room temperature fermented doughs or cold fermented doughs?

Hi Andre, nice video. My friend told me it is very difficult to book at your place, I guess the word spread very quickly around SP, she also told me you open 2 days a week. Why is that? Congrats again and keep it up!

@Pete-zza Hi Pete, long time to see! i am using all room temp, and a blend of two Caputo Flours, Blue (00 Pizzeria) and Caputo verde tipo 0.

@landras Thanks for telling your friends about me! We are working 2x a week this month, and next month 3x a week, i am still training the staff and want everything to be very close to perfect wen we open officially next year, we are calling this year a soft opening.
