Andre,

I know that you have done a lot of experimenting with the Neapolitan style pizzas, including different brands of 00 flours, and maybe you have mentioned this before, but are you using room temperature fermented doughs or cold fermented doughs?

Hi Andre, nice video. My friend told me it is very difficult to book at your place, I guess the word spread very quickly around SP, she also told me you open 2 days a week. Why is that? Congrats again and keep it up!

@Pete-zza Hi Pete, long time to see! i am using all room temp, and a blend of two Caputo Flours, Blue (00 Pizzeria) and Caputo verde tipo 0.

@landras Thanks for telling your friends about me! We are working 2x a week this month, and next month 3x a week, i am still training the staff and want everything to be very close to perfect wen we open officially next year, we are calling this year a soft opening.

 andre, beautifully done photos. every pie is beautiful and you interior is well decorated. the marinara pizza looks very appetizing which is very hard to do. i put it on my mobile menu as a vegan option last week and didn't get many requests.  damn those pies make me very hungry.

I designed it my self using some info here at pizzamaking and some at confraternita board, and also some info that the AVPN sent me. There is a really good post about Neapolitan oven building at the Oven board in the forum.

How are things in Brazil?

I hope to build 2 ovens in the next couple of months.

Could you point me to the good post you speak of - in the oven forum - about building a Neapolitan oven?
