I've been on Amazon's waiting list for almost two years trying to get Polly-O curd. Guess the stuff must be scarse. I may have a source of raw milk this summer, gonna give mozzarella a shot on my own.

I have tried both flavor wise not much different . Polly o adds a whitener to there curd where grande doesn't. When on the pizza to me the grande looks better after baking. This morning I helped a friend  stretch 80 pounds of grande for a mobile oven event . . On a side note I have heard of people incorporating lemon juice in the process any thought on how to do that

Since you guys are in Jersey and into curds, I would suggest you guys check out Cherry Grove Farm in Lawrenceville NJ.  They are a grass fed cattle farm that makes their own cheese that's very popular around here.  Anyway, the cheese maker makes mozzarella curds from a bacterial culture and whenever I've made mozzarella with it, its been packed with incredible flavor.  I live 5 minutes from the place and occasionally drop in the farm store to buy some fresh curds.  Beyond that, they haven't carried it in a while, but I've occasionally been able to buy a mozzarella curd from Whole Foods from Maplebrook.  The flavor was always extremely good.

Ben, Lawrenceville is a bit of trek for me (Morristown), and I'm pretty much an aged low moisture brick kind of guy, but... I do have family down in Princeton, so, I might swing by.  Do they have any other cheeses that stand out?

The Polly O Gold Is avaialable here at my local Rest Depot :)
I prefere the grande over that
but now new fav is  Losurdo  Here in Hack
its what Amano uses  ;D and I am loving it !!

These are their cheeses.  Pretty darn good but I've never put any of them on Pizza.  Not sure if they sell the curds online.

John, did you stop using Belgioioso in favor of the Grande? I still havent tried Grande and my local supply only sells by the case. But price per pound by the case was $2.89 which I thought was a great price.

Now, guys, you can't post links like this.  You will get me into serious trouble.  While I am also a flour addict, at least flour is cheap in comparison to cheese. 
Craig was nice enough to take me to Dairy Maids in Houston and I also did some serious damage at Central Market--but that stayed in Houston on a cash only basis. 
We have some outstanding cheese makers in CNY(farmers markets), and well Wegmans has a great cheese shop and then there are the Italian and Greek markets.  I'm thinking about a special order for some curd for mozzarella from one of the Italian markets. 
Ya see what you've done? I am entertaining a fantasy of cheese stops at different markets from here in Syracuse to Norma's in PA to Baltimore for PG's Hampstead.

DMCavanagh, Polly-O cured is readily available at the RD I go to here in Lombard (Chicago burb).  Strange that it's so rare on Amazon...?  If you're ever in the area, I'll be happy to take you there to pick some up.
