Seems to me like your oven may not be quite hot enough to brown the 00 flour. I would definitely be on the lookout for flour close to $1 per lb or less. In bulk you can get caputo for like 80 cents per lb.
I guess the oven is the issue...
As Chicago Bob suggested I installed steel plates on the bottom shelf of the oven, and as a gas oven powered on the bottom of it, it reached 700F, instead of 550F without the plates
it gave a better result, but I'm not happy so far with the yeast... I do have to work on that.
Maybe I'll buy a stone too, the pizza pan may not be the best way? Taste was pretty good, anyhow!
But it's diet time for my wife, I can't tease her with too many pizza tests !!!!!!!!
