Sbarro recipe??!!

anyone have a clue on how to figure out Sbarro's  dough recipe.  ??? I have been making NY style for a while now, but I really want a Sbarro clone...  any ideas?

here is the link to the site, this place is mostly in food courts, and shopping areas.  it is a "fast food" ny style pizza..  know it is neapolitan dough, and I have  tried and tried again,  but I can't get it just right. I really want to copy it at home.  don't get me wrong,  I make a great ny style pizza, I just want to cone thier version.

My wife said there is one in a mall not to far away.  I'll try it next time i am there.  Give me a week or so.

Sbarro's is an interesting-tasting dough.  It's hard for me to try to describe it.  DKM, if you get a chance to sample it, I'd be interested to hear how you try to communicate its taste!

Funny story: I'm at an Indianapolis Colts game in 1988 and the guy next to me asks me if I like pizza. I said "Of course, I'm from Chicago". He asks "Ever tried Sbarro's?" I reply "Yea, it sucks". After he stops with the expletives, I find out he's the owner. Haven't tried it since.  I should have asked "Why" before I replied.

in Germany, one would say you put your foot into the butter dish. Sounds strange in English, but in German it's funny.

ok, well what I do is nothing fancy, I think it is pretty good.  and this saves lots of $$.

this recipe is give or take a little depending on the humidity,
1 lb high-gluten flour *I use Barry farms 15.6% protein*
9.5 oz  warm water
2 tsp   yeast
2 tsp  white sugar
1 tsp  sea salt
1 Tbsp  oil   *sometimes lite olive oil, sometimes canola*

1. proof yeast in water & sugar untill frothy, add oil.
2. in my kitchen aid mixer, I combine yeast and sifted flour & salt, half cup at a time. knead until smooth and elastic, I check for that bakers window.
3. place in clean lightly oiled bowl, and let rise 2 hours, punch it down a bit, then let sit in the fridge overnight.
4. take out about 1 hour 30 minutes befor I make the pizza
5. spray my pizza screen with non stick spray, strech the dough out, add a sweeter sauce, cheese, toppings.
6. heat my oven to 550* the hottest my oven will go and bake on a pizza screen untill the edges are puffy and the cheese is melted.

Has anyone on the Forum managed to produce a dough that is as flexible or pliable as the one they show in their video there?

Pretty close with Randy's, Steve's, and American Pie's recipes for NY.

I highly recommend buying American Pie, ignoring the first 3rd of the book and jumping straight to the recipes.

Try using a third pastry flour (White Lily is great)--this pretty much duplicates the Sbarro crust.

Hi Buzz, it's been a while since we heard from you......

so you can get the dough more flexibel or pliable by adding a low gluten flour like Pastry flour to the high gluten flour? That would make something like 00 flour.

I've never been to Sbarro's....is the pizza crust there more like New York style or is it something like thin crust?

Not exactly but close enough that if you haven't had a Papa Ginos pie in a month you won't be able to tell the difference

They closed the one near me...never had one though.....
