Double Pizza toss?

I was looking at some pizza tossing on you tube and came across Tossing Pizza Dough at Manco & Manco's in Ocean City, NJ

At first it all seemed normal but when he put the skin down he peeled it apart revealing that he was tossing two skins together.

Having never seen this before I was wondering if this was to toss a super thin skin or a time saving maneuver...?

I also saw the same thing when I was at Manco & Manco's in Ocean City, NJ.  Another member also posted the same thing on the boardwalk thread which discusses Mack's and Manco & Manco's pizzas.  I also was in awe that a pieman could actually do that.  :o Peter even commented he would pay to watch someone open two skins at once.

I wish the video started a bit earlier and showed the assembly process.
Do you think it is to get it super thin without tearing?

I did post videos of the piemen at Mack's opening dough balls different times on the boardwalk thread from me taking videos and from Youtube.  For some reason their dough is very resilient at Mack's and Manco and Manco's.  The owners are both related.

The last time I was at Patsy's in East Harlem, I noticed that they opened two skins at once. They lifted and stretched the two together as one, but I don't remember them tossing the pair like that.

The dough in that video looks pretty strong, I wouldn't be surprised if he could toss single skins in almost the same way.
