Hi Meatboy,

Yes its ordered direct from the manufacturer, I emailed them a couple of weeks ago requesting a quote and still have to receive a reply, however, I have been informed that the company is most likely closed for holidays. apparently Italian companies close throughout August so I'm hopeful Ill hear from them in the next week or two.

I've received instant reply to my inquiry. the oven is 305 EUR + VAT + shipping (same as Seb quoted somewhere)

It's funny how a lot of us, including myself, take pictures of our pies as if they were our offspring.  :-D

Nice work, Seb. Your pies keep looking better and better. One of these days you should shoot a video of yourself making one. I'd love to watch a vid of NP "Made in France", lol.  :D

Seb - I just want to say how jealous I am of your oven, living in an apartment in the US has thwarted any attempts at creating NP pizza. Your pies look great, I look forward to seeing what's next!

Dough is 24 hours.
250g dough ball, baked in 60 seconds.

Toutes les dimensions sont sur le site d'EffeUno, mon four est trop chaud pour mesurer maintenant ;)


I made only one ball.
160g flour.
104g water.
1g eight months old frozen fresh yeast.
5g salt.
20 hours room temp fermentation (15 minutes rough and the rest in ball).
80 secondes baking.

Hi,

White sauce is "crème fraîche" (http://en.wikipedia.org/wiki/Cr%C3%A8me_fra%C3%AEche).


Hadn't bake for 3 months !
Hydrat 60%.
36h room temp, 12h in dough balls :
