Guys need your help with baking my pizzas... I face this problem: sometimes even though dough balls are big enough, when I start baking , pizzas rise in the oven good enough but i get Small pieces of rough dough inside the crumb... i use Tom Lehman's NY style recipe with 3-5 days dough being retarded

any help will be appreciated
