Chaz, I suggest that you try all three and see what you think. I started with ADY, went to IDY and tried fresh caked yeast. Fresh yeast worked ok as long as it was FRESH. I didn't appreciate a better taste. I like IDY due to ease of use. A Recent class I took suggests that ADY is more consistent than IDY. I did not see that but I bake on average one pie per week. Not a big sample size.
