Metal peel for LBE?
« on: April 13, 2013, 07:57:45 PM »
My LBE is almost finished.  ;D
I have 2 nice wooden peels and am wondering if i need to invest in a metal one?
I have seen some people launch with a wooden then turn and bake with a metal.
I realize the LBE puts out a lot of heat, is the metal an absolute necessity?

It makes retreiving your pies so much easier.

I dunno how your lbe is set up, with mine I have to lift up the lid to turn and retrieve my pizzas.  I found that for turning a metal spatula was simply what worked the best.

I use a cheap aluminum pizza pan like Villa Roma does...All hail Villa Roma, inventor of the LBE!

+1

The handle and the ease of sliding under the pie. You need to be quick when cooking on an LBE. Want to minimize the time the lid is off for top heat.
