Man,

JJ (mmmph) and my neighbor Kenny really fired it up tonight. Skills allover the place!!! As those here Who have baked pizza for groups of this size know: the focus is on the guests, not the photos! But here are a few: 

Thank you to my two pizzaiolos (JJ on banconista duty and Kenny on pizzaiolo duty) for making this pizza party for 50+++ people a stunning success!!

JJ brought homemade guanciale, speck, and asparagus, as well as hot sopressata, and a killer dough.

That is leftover pizza dough (bakeshack's recipe) that was simply lifted gently out of the dough tray the next morning, elongated, folded back on itself, and allowed to rise for an additional hour in a couche (dishtowel!) and then baked in the still-warm oven (500F) the morning after the party. Great crust and I was pleased with the crumb as well!

We started at 5 pm and eaters started slowing down around 8:00-8:30 pm and JJ and Kenny then took a break. Only a few random pies after that.

It was a lot of fun and the pies were great. Three different doughs used (bakeshack's, Craig's and JJ's) and I thought each had their own different merits. Much credit to the banconista (JJ) and pizzaiolo (Kenny) who allowed me to take orders and keep the crowd from getting unruly! :-D :chef:

@jamieg - The floor was at 950F and the dome 1195F most of the evening. We kept the fire stoked. Bake times were around a minute, give or take.

@TXCraig1 - I'm the one with the goatee. John is the dark handsome upside down fellow and a gracious host. Kenny is in the blue shirt.

@MightyPizzaOven - We baked all the pizze in less than 4 hours. Dunno about Serpentelli's prep. I imagine it was lengthy.

Lots of requests. Jalapeno and pepperoni was a popular choice. I hit a couple of those with a drizzle of honey. Meatballs...Italian sausage...Scampi...Lobster pizze...Steak & blue cheese. Threw a Hellboy with Mike's Hot Honey, and even a vegan pizza with Daiya "cheese".

It was a blast. Some of the pies that came out were truly stunning.
