Can someone please help me figure out oil%?

50lbs flour
20oz oil
50lbs flour= 800 oz   20 oz oil divided by 800 oz flour=.025    .025 x 100=2.5% ( Multiply a fraction by 100 to get the %)

Thanks Bob.  Alot lower than I thought it would be.  I made a calzone at my 2nd job today and it turned out very good.  I had to make it myself though because they make them like Stromboli.  They use primo gusto Bromated HG flour and a mix of vegetable/olive oil.  They bake in a highwall non preferated pan and bake for 7mins on a conveyor oven.  I have many problems trying to cook these at home.  Either too hard on the edges when directly on stone or not cooked on the bottom when using preferated pan on preheated stone.

I would steal;I mean borrow, one of those solid pans and try it low in your home oven @ around maybe 4an a quota- 4 fidy.  ???  Not real crazy 'bout the high sided pan though for at home...borrow one of their low boys and give 'er a whirl.  :chef:
