Thanks Bob. Alot lower than I thought it would be. I made a calzone at my 2nd job today and it turned out very good. I had to make it myself though because they make them like Stromboli. They use primo gusto Bromated HG flour and a mix of vegetable/olive oil. They bake in a highwall non preferated pan and bake for 7mins on a conveyor oven. I have many problems trying to cook these at home. Either too hard on the edges when directly on stone or not cooked on the bottom when using preferated pan on preheated stone.
