Why do some people add parm to sauce...

I was wondering what the benifits of adding parm to sauce is? I think it actually gives the sauce a cheap "jar" taste. A popluar NY pizzeria in my area does this.

The Parmesan cheese is said to take the edge off of the tartness (acidity) of the tomatoes. To some, that makes for a more palatable sauce, and it might also absorb some excess water.
