Went to Vermont today to the King Arthur factory and scored a 25 pound bag of KA AP unbleached for $15!   :drool:

We were already there :-). But there's nowhere locally that I know of where I can get it for .60 per pound.  Is there??

That I don't know but I can get a 50lb. Bag of it at my local food distributor for around thirty and some odd dollars I think.  But for AP flour, I just buy the Costco stuff.  :)

I want to visit the King Arthur store in the fall, how did you like it and did you go to one of their baking demonstrations while you were there?

No, but it's amazing. I want to see about taking some of their classes.  Definitely worth the trip!

I picked up some Sir Lancelot too but need to see how it will do with my thin, low hydration (48%) crust. Usually the higher gluten flours make it chewy, actually rubbery.

If you have a Costco near you they sell KA AP in 25lb bags, I don't recall the price though.

BJ's has 10lb bags for $6.59.

Also, does anybody know how to tell when flour gets old and stale? Is it by smell or some other test (bugs)? I'm currently working on a 50 lb bag of General Mills Full Strength.

I keep excess flour in the freezer and it seems to last for a long time.
Pizza is not bread.

Well, their website says it can last a year in storage. I was pretty shocked.

I'm still in hobby mode until I can find a space to open up legitimately.  Making pizzas for friends and neighbors and trying out new things and practicing with my oven and sheeter.  I am putting out about 15 pizzas each weekend.
