Advice needed from pizza food truck operators please...
I want to produce frozen, "Rising crust" pizza and calzones using IQF ingredients, to retail on a food truck.
I'm hoping for a sub-3 minute "bake off" for a frozen "Mini" pizza (7" x 4-slice).
I just bought a used Vulcan Flashbake - VFB12-2 Oven (excellent condition, sub-$600) for product development.
Is this a suitable oven for pizza?
I've seen reviews of the Ovention Matchbox 1313 and Matchbox 1718 Ovens...
but the prices ($8,500 & $9,600) are "over budget" at the moment.
What other types of "fast bake" ovens would you suggest?
