Not sure how to respond to that one Marco ? I am sure your ovens are very likley superior to all other ovens? and did not mean to leave your Forno Napoletano out. You lay Each brick with precision,carefully Placed to obtain the perfect finished product as shown above. Also, as mentioned this is just my humble inexperienced opinion. not fact. I also like the Stefano ovens there are many of them here in the USA for good reason. Its ok if we disagree, however I just dont bash other ovens, especially with the quality of a Mario Acunto, not my style. Is there any other builder you can recommend that may come close to your Masterpieces? Have you spoken with Motorino or Forcella if they are happy with their Acunto ovens in a commercial environment? I get there as often as possible and the pizza is consitently good. Doesnt Roberto use an Acunto In a commercial setting at Don Antonio ? Will you be replacing any of these ovens when they fail ?
I have not cooked in a Commercial environment with an Acunto some day ! and I have never even seen a Forno Napoletano live, or in action. (only You tube) Hopefully someday I will have that opportunity as well. If you send me a list of USA locations I will definatley be interested to see your oven, which again I can only dream about at this point. I have seen side by side MA, GA and Stefano and the build quality is visually apparent, and in my untrained eye there is no comparison ? I use an Earthstone refractory Kit in my Back yard and a forno bravo? (trailer) to make a pizza, so again I am NO expert by any means. That is expert is you. In my case neither the tile (none) or the oven (Low end for sure) cooks the pizza, My Passion does. I and my customers are very happy with the product I make (also Imperfect in many neapolitan ways )in a 40" forno bravo

My real answer should be there really is no Best, but several Very very good options? The "Mobile Oven" (a good percentage of ovens for new openings in the US Market) By that I mean Factory Built, and shipped around the world offer many options at an affordable price to most customers here in the USA I think thats what I was reffering to so please dont get me wrong. I also do not know the cost on your ovens? and pretty sure it would not be disclosed until a contract is signed right? If you could build me one of your Napoletano on a trailer for $15K I will send you a check right now ! However I know thats not possible
I am sure Gino ( or whoever that luck dog is) will LOVE the new replacement oven for sure.
