Anybody with a WFO need help with recipe

Hello,

I would like to try a different recipe besides the one I use for NY-Neapolitan, in my wfo, want to give it a try using a preferment, can I modify my recipe and incorporate a preferment, not sure how to calculate that need your kind advise.

Try it with fresh yeast and see what you think.
