My Typical Sauce

I've experimented with all sorts of ingredients for sauce over the years, but I've settled on a basic sauce of:

- Tub of cherub tomatoes (from Sam's)
- TBSP of tomato paste
- 1/4 cup Parmesan cheese (from a shaker can)
- 2 or 3 cloves garlic
- several dashes of dried basil and Italian mixed herbs
- pinch of salt
- black pepper

Depending on my mood, ingredients on hand, or the taste of my crowd, I might alter this basic recipe by adding a can of Fire-Roasted Tomatoes (in lieu of paste), maybe some sweet onion, or fresh herbs that (if they are handy).  I've also experimented with adding chopped black olives, minced red bell pepper, or anchovy water, all of which were good.

This amount of sauce will cover 2-4 pizzas, depending on size and taste.

Don't mean to pimp my own OP, but I didn't mention that I run the tomatoes, garlic, and other ingredients through a food processor to get a fairly smooth sauce.  I use fresh herbs when available, but most often must rely on dried.  In the summer, if all goes well with the garden, I use home-grown 'maters.
