Malnatis for lunch....disappointed

Been about a year for me.  Does this look like 100% AP flour to you or just way over kneaded?  Was super bready.  I have finally come to realization that I make a better overall deep dish then these guys or at least their franchise locations.  I feel they still have the better tomatos but my crust and balance of ingredients blows them out of the water.

Quality varies.
Odds are that you have become so much better at making deep dish at home
that a lunch-time Malnati's slice just doesn't 'do it' for you anymore.  :chef:

I recommend shaking on some hot pepper flakes to mix it up a bit. :-)

The way the rim cooked up on that; I don't think they left out the semolina but is does all look quite bready. Not too crazy about that cheese...maybe that franchise is trying to cut some corners?

What tomato's aer you working with pythonic?

Bob,

I use the muir glen plum tomatoes which are very good.  Not sure if there is semolina in their pies.  Personally I think there is some bread flour in their recipe because of the texture.

Uno's Geno's East,etc, I may be wrong but I think Lou's is a rarity with his all flour dough.  ???

I think there is sodium bicarbonate in there too.  Tastes like Irish soda pop little.
