After a few years of buying numerous books on baking, I just added these two to my collection.

Larousse Gastronomique: The World's Greatest Culinary Encyclopedia
The Escoffier Cookbook and Guide to the Fine Art of Cookery

Don't know why I didn't already have these.

I have a Larousse 1965 edition that my MIL gave me.  She had no use for it, but boy do I love it.  The most recent addition to my small collection is The Flavor Bible.  Kind of funny, it arrived out of the blue one day from one of my SE friends, just because she thought it fit my style of cooking.  Such a thoughtful thing to send to me.
