I was able to do another test today. 
I must say,  i am getting more comfortable using this oven.  My stress levels launching and during the the bake is much lower!!

I also experimented using the oven without the heat shield.

half an hour later,  the oven is ready at 405C.

without the heat shield,  i get the impression there is more space so its much easier to manouver.
i really like it.

this was a 24 hour dough at 62% using standard bread flour.

about 1 min 45 sec later...

i would have preferred the bottom to have a little more charring but overall i am very happy with my progress.

Maybe you could try a slightly smaller dough ball for that diameter of pie to get the center thinner and therefore crispier?  It looks fairly thick in the middle to me in the pics.  What weigh dough ball are you using?

The dough balls are only 200g each.

But having watched the videos on youtube, the problem i noticed is my technique: iam too "gentle " with flattening my dough.  As a result its too thick.

Tonite i will try again and be more forceful flattening the dough.

On the subject of chimneys, what is the purpose of having an adjustment capability on the lid of the chimney?  Say if i have it all the way up or somewhere in the middle?

I don't think the chimney has much purpose while under fire, but when you have a good bed of embers you can close the chimney all the way and bake bread or similar. It will maintain temp for an hour or two, depending on how big of a pile your embers are.

half an hour later,  the oven is ready at 405C.

I know they promote 25-30 minutes preheat time, but I prefer giving it a full hour at least to saturate the hearth with heat. I encourage you to give it a try, you may get better charring.

I must say, i am a fan.  this dough is wonderful. so elastic and easy to manage/shape.

This was a 62% hydration, 1 day ferment at room temperature. baked at 400C.  Took all of 93 seconds!

What a blast cooking in this woodfired oven!
Here's my version of a neapolitan style pizza,  cooked for approximately 96 seconds at just a tick under 400C (750F).

and i just LOVE the puff of  steam that comes out of the pizzas as soon as you take it out of the oven.
i always look for that steam whenever i watch pizza videos on youtube.

its almost as though the pizza is saying "glad i'm outta there!"  hahaha.

Nice post Moy!

I ordered the 70x70 recently too. Had it delivered to me here in Dublin, Ireland. Simone from PizzaParty was so helpful. The first time I used the oven I stupidly dropped the glass door and broke the pane of glass. I let Simone know and he sent me a new pane of glass to put in the door free of charge!

That's service!

I'm loving the oven too. I seem to be more popular now. I'm pretty sure it's just cause I'm awesome and not because of the pizzas.....right?

Becoming more aware of how the pizzas cook depending on temps, and I'm finding it is essential to have the correct kiln dried wood with low moisture. Otherwise it's very hard to keep the high temp up.

Keep the pictures and videos coming and enjoy the pizzas. They look great!!
